Gooey Chocolate Butter Cookies

These were a hit last Christmas so I might make them for our New Year’s Eve lunch/dinner.

  • 1 (8-ounce) brick cream cheese, room temperature
  • 1 stick butter, at room temperature
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 (18-ounce) box moist chocolate cake mix
  • Confectioners’ sugar, for dusting


1. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth.

2. Beat in the egg.

3. Then beat in the vanilla extract.

4. Beat in the cake mix.

5. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls.

6. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar.

7. Place on an ungreased cookie sheet, 2 inches apart.

8. Bake 12 minutes. The cookies will remain soft and “gooey.”

9. Cool completely and sprinkle with more confectioners’ sugar, if desired.

    Mmm these sound yummy! I might make some when I get home but tonight I’m making more Chocolate Chip Crunch cookies. It’s a recipe I got from The Chocolate Chip Cookie Murder by Joanne Fluke and they are a huge hit!

    That’s a book? I’ll have to check it out. I’m always looking for new recipes to make when the family visits during the holidays. It’s the only time I can really indulge. LOL.
